No-Bake Mini Brownie Bites [Sugar Free, Gluten Free]

 Ingredients

2 cups almonds (soaked in water overnight)

13 Medjool Dates


1/2 cup dark chocolate chips

 Directions

Place soaked almonds into processor and blend for 5 minutes.

Add dates and blend till smooth.

Add chocolate chips and blend till incorporated.

Place dough in refrigerator for at least 30 minutes.

Once dough is chilled scoop out a teaspoon of mixture and roll into balls.

You can leave them as is or roll in your favorite addition.

Options: chopped nuts, coconut, chopped chocolate, chia seeds.

Lemon Pistachio Date Bites

I can honestly say I began baking because of my severe sweet tooth.  After being diagnosed with an autoimmune disease, I knew I needed to get a handle on my sweet tooth if I wanted to successfully manage lupus without medication.

I love experimenting in the kitchen and finding healthy ways to curb my love of sweets.  This recipe hit the mark perfectly and takes a few minutes to prepare.

Ingredients

1 1/4 cup pistachios

12-14 Medjool dates

Zest of one lemon

Tsp vanilla

1-2 drops food grade lemon essential oil (I used DoTerra)

3 tablespoons shredded unsweetened coconut (I used Bob’s Red Mill)

Juice of one orange or water 2-3 tablespoons

Directions

Add 1 cup pistachios, Medjool dates, lemon zest and lemon essential in processor.

Blend until smooth.

Scoop out with teaspoon and roll into balls

When done place 1/4 cup pistachios and shredded coconut into processor and pulse till blended and combined 5-6 times.

Place coconut mixture into the bowl.

Place orange juice or water into a bowl.

Drop one of the bites into the orange juice roll around and then drop it into the coconut mixture using a fork to press onto the bite.

Place bites onto a plate or sealable container.

Simple Black Bean Sliders

Simple Black Bean Burgers

We love sliders.  I mean what’s not to love.  Little bite size pieces of goodness.  I must say these have become my recent favorite slider.  I have made my quinoa sliders so many times with so many variations.  I love just grabbing a couple and eating while waiting in parent pick up or out and about.  No mess, no fuss. These simple black bean sliders have become a new addition and we are loving the just as much.

I had some black beans left over from dinner and decided to throw these together.  They turned out so much better than I imagined and my daughter and I kept sneaking them off the plate before we called everyone to the table.  Hey that is the benefit of being the cook. 😉



Ingredients

2 cups smashed black beans

1/4 cup shredded pepper jack cheese

1/4 cup shredded cheddar cheese

3 eggs

1 cup broccoli (pulsed in processor or coarsely chopped)

4 tablespoons Sriracha

1 tablespoon coconut flour

 

Directions

Preheat griddle on medium heat.

In a medium bowl, mash black beans with a fork until thick and pasty.

In a food processor, finely chop broccoli and  then stir into mashed beans.

In a small bowl, stir together egg and Sriracha.

Stir the egg mixture into the mashed beans. Mix in both pepper jack and cheddar cheese as well as the coconut flour until the mixture is sticky and holds together.Using a 1/4 cup cookie scoop, scoop out mixture a place on griddle

There are two things I love in a variety of ways.

Pumpkin and cheesecake. 

These bites combine both.

As a food blogger and recipe developer, we tend to have lots of leftovers.  This was the case with the creation of this recipe. I had some left over items from a few recipes I made and decided to make a treat for the kids lunches.

I hope you enjoy them as much as we did.

Ingredients

1 cup almonds

1 cup pumpkin granola

10 dates

2 Tbsp coconut flour

1/4 cup pumpkin pie cream cheese dip

Place all ingredients in processor.

Process till smooth.

Dump mixture into bowl and scoop out teaspoons and roll into balls.

These were a big hit with the whole family and they worked great for school lunches.
