Sweet Potato Hash with Oatmeal Crumb Topping




5-6 large sweet potatoes

2 tsp spice

1/4 cup brown sugar

1/4 cup fresh orange juice

1/2 tsp salt

1/4 cup maple syrup

1/2 Tbsp vanilla



Crumb topping

2 cups oatmeal

1 cup chopped almonds

2 tsp cinnamon

1/2 cup brown sugar

1 stick of butter


Preheat oven to 450

Cut sweet potatoes into cubes. Toss with pumpkin spice, brown sugar, salt, orange and vanilla. Place into two pans.

Crumb topping.

Put all ingredient into bowl and mix with fingers. Sprinkle on top if mixture.

Cover with foil and cook at 450 for 45 minutes, until potatoes are tender.

Remove foil and bake for an additional 5-10 minutes.

Once done, take pans from oven. Drizzle maple syrup over crumb topping.

Serve warm with whipped cream.
